Broccolini
- 1/2 cup chopped onion
- 1 lb ground beef
- 1 lb hot Italian sausage
- 1 14 oz package frozen broccoli thawed, drained (don't use floretts)
- 1 egg slightly beaten
- 1 8 oz container sour cream
- 2 tsp dried oregano
- 2 tsp dried basil
- 1 tsp dried garlic
- 1 box large pasta shells
- 1/2 cup fresh fancy grated parmesian cheese
- 1 16 oz pkg mozzarella cheese
- 2 qts tomato sauce
- Cook shells al dente. Microwave broccoli on high for 3 min. Broccoli muat still be firm. Saute onion in olive oil until translucent. Add ground beef and sausage (remove casing if using links). Brown meat, drain if necessary and season to taste with salt and pepper. Cool. Combine egg, sour cream and spices, mix well. Stir egg mixture into browned meat. Stir in grated parmesan and broccoli. Stuff shells with mixture. Put thin layer of tomato sauce in bottom of two 9x12 baking dishes. Place stuffed shells tightly in dish, cover with sauce and mozzarella cheese. Bake in 350 degree until hot, about 25 min.
