Lentil Soup
- 1 carrot diced
- 2 stalks of celery diced
- 1 onion chopped
- 1 lb. of Italian sausage, hot or mild ( I used Chicken Italian sausage from sprouts)
- 2 crushed garlic cloves
- 1 14.5oz. can of fire roasted tomato's
- 1t. ground fennel
- 1t.thyme
- 1t. oregano
- S&P to taste
- 1 box or 2 cups of dry lentils ( I use more)
- 6 to 8 cups of chicken stock ( 2 boxes)
- Shaved parmesan
- Sausage and lentil soup

- In a nice pot brown your sausage and drain, with the Chicken I didn't have to. Then put some olive oil in the bottom and saute veggies and garlic. Open up the stock, pour that in, along with all the spices and lentils, stir it up, semi cover it and let it cook for about 1 1/2 hours.
- Top it off with shaved Parm and a drizzle of olive oil!
