Richard'S Goat Cheese Pasta
- 1 box Fusilli noodles cookec
- 6 Roma tomatoes diced
- 6 Basil leaves shredded
- 3 T Pine nuts toasted
- 5 cloves of Garlic chopped
- 4 Sun dried Tomatoes sliced
- 1/2 cup Kalamata Olives
- bunch of green onions chopped
- Toss above and cool
- 1 8oz log Montrachet Cheese/goat (add chunks after cooled)
- Dressing:
- 1 lemon juiced
- 3/4-1 cup olive oil
- 1/4 cup red wine vinegar
- 1 t Herbs of Provence
- 2 pinches of red pepper flakes
- salt and pepper
- Toss with pasta mixture
- 15 grinds of pepper
- Cook pasta.
- Toss in veggies/nuts, etc.
- Make dressing.
- Toss dressing with pasta mixture.
- Add chunks of goat cheese once cooled.
- Add fresh cracked pepper.
