Candice'S Veggie Quiche
- 1 pie shell - thawed to room temp.
- 1/2 Leek (green and white parts
- 1/2 Red/Orange pepper
- 1/2 Zucchini
- 1 tbsp. Olive Oil (approx.)
- 2 Shallots - sliced thin
- 1 tbsp. butter
- 2 eggs and replace 2 add'l eggs with egg beaters (1/4 cup?)
- 1/2 Cup Ricotta cheese
- 1/2 Cup Gruyere cheese (shredded)
- 1/4 Cup Parmesan cheese (shredded)
- 1/4 cup Half and Half
- 3/4 tsp. Salt
- 1/4 tsp. Pepper
- 1/8 tsp. Ground Nutmeg
- 3 tbsp. Fresh dill
- 3 tbsp. Fresh mint
- Possible additions to try:
- Fresh Cilantro
- Fresh Roma or Grape Tomatoes
- Cayenne pepper
- Saute shallots in butter
- Leek needs to be sliced and halved
- Slice or Chop Pepper and Zucchini to bite sized pieces
- Toss with Olive Oil
- Cook leek/veggies about 15 minutes in 350 oven.
- Mix eggs, half & half, and spices in bowl;
- Next add cheeses, shallots, veggies and fresh herbs.
- Once all mixed,
- Pour all into thawed (room temp) pie shell and cook 35 minutes in oven preheated to 375. After 20 minutes, cover to keep crust from burning.
