Tarragon Basil Pesto Over Orzo And Salmon
- 1/2 cup fresh tarragon
- 1 1/2 cup fresh basil
- 1/2 tsp. of dried mint flakes
- 1/2 cup parmesan cheese
- 1 tablespoon lemon juice
- 2 tsp. lemon zest
- 10 cloves garlic
- 1/4 cup pine nuts
- 1/2 cup oil
- 1 cup orzo
- 1 fresh salmon, boneless and skin removed
- 1/2 cup sun dried tomatoes, cut in to strips
- Saute garlic and pine nuts in oil then combine in first set of ingredients in a food processor. Set aside.
- Put salmon on a cookie sheet with foil. Top with half of the pesto and 1/4 of the cup of sun dried tomatoes. Wrap in foil and bake at 350 F. for 15 min or until fish flakes. Meanwhile, prepare the orzo according to the instructions. Once the salmon is cooked to the desired doneness.Put the orzo on to plates. Top with the rest of the pesto and tomatoes. Plate the salmon along side of the orzo. Bon Appetit!
