Grilled Chicken On Mango Salsa

  1. 1. Combine mango juice and fresh ginger in a small sauce pan and reduce juice to 1/2 of volume (put aside to cool)
  2. 2. Combine rest of mango salsa ingredients. If increasing volume of serrano peppers keep in mind that the heat in this recipe builds quickly over time. (Pain is not a flavour) Add salt to taste.
  3. 3. Add mango reduction to mixture
  4. 4. Season chicken with favourite seasoning (I usually use cajun spices or herbs de Provence) and grill until done
  5. 5. Serve chicken on bed of mango salsa
