Snapper With Berry Wine Sauce
- 2 shallots, finely chopped
- 2 tsp olive oil
- 1 cup chicken stock
- 1/2 cup red wine (Pinot Noir or a light, dry, fruity red)
- 1/4 cup fresh raspberries
- 1/4 cup fresh blackberries
- 2 tsp sugar
- dash of allspice
- 1 lb red snapper fillet
- salt
- pepper
- 1/4 tsp dried thyme
- Preheat broiler.
- In a small saucepan, saute shallots in olive oil over medium heat until translucent. Add broth, wine, raspberries, blackberries, sugar and allspice. Bring mixture to a boil, stirring occasionally. Once thickenend (12-15 minutes) remove from heat and strain sauce.
- While sauce is cooking, sprinkle fish with thyme and salt and pepper to taste. Place fillet under broiler for about 10 minutes or until it just begins to flake when poked with a fork.
- Pour sauce over fish and serve.
