Mushroom Cheese Sandwich
- 2 slices of bread
- large whole portabello mushroom, sliced to fit bread slices
- 1 small onion, sliced
- 1 garlic clove, minced
- 1 - 2 tbsp. olive oil
- 5 tbsp. mayonnaise
- 1/3 cup olives, drained
- tomato slices cut to fit size of bread
- broccoli or other sprouts
- shredded cheese, I use KerryGold Dubliner
- Mrs. Dash extra spicy to taste
- 1 tsp. lemon juice
- salt and pepper to taste
- Saute onion and garlic in 1 Tbsp. olive oil stirring until soft and translucent.
- Put mayonnaise in blender.
- Add olives, sauteed onions, garlic, and lemon juice.
- Blend.
- Add Mrs. Dash to taste & refrigerate.
- In second tblsp. olive oil, saute portobello mushrooms until soft.
- Assemble sandwich in square of tin foil.
- Put mayonnaise mixture on each slice of bread. Add the mushrooms, tomato slices and sprouts. Sprinkle with shredded cheese.
- Fold up sandwich in tin foil and bake in hot oven for 15 minutes until cheese is melted.
- Use tin foil to hold sandwich together while eating.
