Luau Baked Fish
- 2 lbs fish dressed for baking
- 1/2 cup sliced celery
- 1/4 cup chopped green pepper
- 1/4 cup chopped green onion
- salt and pepper to taste
- 1 package herb stuffing mix
- 3 tbs water
- 1 tbs butter
- 1 tbs brown sugar
- 1 tbs corn starch
- 2 tbs water
- 1 tbs butter
- 2 tbs lemon juice
- 2 tbs soy sauce
- 2 tbs green onion
- 1 clove garlic
- Cook celery, green pepper, and chopped onion in 1 tbs of butter until tender. Add stuffing mix and 3 tbs of water. Stir well.
- Place fish on sheet of greased heavy foil in a shallow baking pan or sheet. Sprinkle salt and pepper on fish and in cavity. Fill cavity with stuffing mix. Seal foil around fish.
- Bake at 350 for 30 minutes, then open foil and bake 15 minutes more -- until fork pierces easily to bone the thickest part.
- While fish is baking, combine brown sugar and cornstarch in sauce pan. Stir in 2 tbs each of water, lemon juice and soy sauce. Add green onion, 1 tbs butter and garlic. Cook until thick and bubbly, stirring constantly. Place fish on serving patter and pour sauce over.
