Roasted Eggplant W Pears
- eggplant, peeled and sliced
- salt and pepper to taste
- balsamic vinegar
- oil
- diced pears, peeled
- red or yellow onion
- pine nuts roasted
- fresh flat or round garlic chives diced
- fresh chopped parsley
- mint (optional)
- feta cheese or other cheese added at end (optional)
- peel and slice eggplant, put in butered or sprayed roasting pan w chopped onions, chives and parsley
- roasted pine nuts and
- diced pears on top
- sprinkle on salt and pepper to taste, add balsamic vinegar and oil and mix so that balsamic vinegar etc is introduced to all the above ingredients evenly, bake for 45 min or till golden brown and soft
- add feta cheese, at end along with some fresh chopped chives and parsley and serve either hot or at room temp.
- can be frozen
