Spicy Corn And Chicken Chili
- I Tablespoon Olive Oil
- 1 Large Onion, Chopped
- 3 cloves garlic, Chopped
- 1 1/2 - 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Cayanne pepper to taste
- 1 lb ground chicken
- 1 (15 ounce) can tomatoe sauce
- 1/2-3/4 cup mild or medium salsa
- 1 (16 oz) bag frozen corn kernels
- S+P to taste
- chopped cilantro
- In a large soup pot, heat oil over medium heat. Add onion and garlic and cook 5-10 minutes stiring frequently until onions are translucent. Stir in chili powder, cumin, coriander and cayenne and cook 2 minutes. Stir often until flavors have melded and chili is thick. Add cilantro and serve.
