Zuchinni Parmesan
- 1 lb Zuchinni
- 1/3 cup Italian Bread Crumbs
- 2-1/2 Tbsp Grated Parmesan Cheese
- 1/2 tsp salt
- 1 egg
- 1 tbsp water
- 1/2 tsp oregano
- 1 tsp crumbled dry basil
- 1/2 tsp grated onion
- 2 tbsp Olive Oil
- 2 tbsp butter
- 1/4 lb Mozzarella, sliced thin
- 1 8oz can tomato sauce
- Cut zuchinni in 3/8" slices, mix bread crumbs, parmesan cheese & salt in a bowl. Mix egg and water in a separate bowl.
- Combine tomato sauce, spices & onion with salt in small pan, heat to boiling, let stand on warm.
- Heat oil and butter in a skillet, dip zuchinni in egg, roll in parmesan crumb mixture. Brown in oil and butter, both sides.
- Place browned zuchinni slices in 7x11 baking dish, spoon tomato sauce on and around, lay mozarella slices on top.
- Bake at 350 F for 25-30 minutes. Serve hot.
