Zuchinni Parmesan

  1. Cut zuchinni in 3/8" slices, mix bread crumbs, parmesan cheese & salt in a bowl. Mix egg and water in a separate bowl.
  2. Combine tomato sauce, spices & onion with salt in small pan, heat to boiling, let stand on warm.
  3. Heat oil and butter in a skillet, dip zuchinni in egg, roll in parmesan crumb mixture. Brown in oil and butter, both sides.
  4. Place browned zuchinni slices in 7x11 baking dish, spoon tomato sauce on and around, lay mozarella slices on top.
  5. Bake at 350 F for 25-30 minutes. Serve hot.
