Peanut Butter Chocolate Chip Cookies
- 1 egg
- 2 Tb canola oil
- 1/4 cup maple syrup
- 1/4 cup barley malt
- 1/4 cup peanut butter
- 1/4 cup water
- 1 tsp vanilla
- 2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup oat or barley flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup coconut
- 1/2 to 3/4 cup chocolate chips, malt sweetened
- 1/3 cup walnuts, coarsely chopped
- Pour oil into 1/4 cup measuring cup (2 Tb is half of 1/4 cup) and swirl oil around so it coats the inside of the cup. Pour oil into large mixing bowl. Then pour barley malt into measuring cup with oil. The oil prevents the barley malt from sticking. Add to oil in bowl.
- Add maple syrup, peanut butter, water and vanilla. Whisk ingredients together.
- Add dry ingredients to the wet. Mix well.
- Drop by the heaping tablespoon onto a cookie sheet. Bake at 350 degrees F for 15 minutes, or until cookies are browned.
