Corn Relish

  1. Use large saucepan (8 quarts).
  2. Cut corn from cobs, scraping the ears, making about 4 cups.
  3. Mix corn with the chopped vegetables.
  4. Place all vegetables in large pan and add all remaining ingredients.
  5. Bring to a boil and simmer the relish over low heat, stirring occasionally, until fairly thick, about 30 minutes.
  6. Process in boiling water bath for 10 minutes.
  7. Yields 6 1/2 pints.
