Corn Relish
- 7 large ears sweet corn
- 4 green peppers, finely chopped (about 2 c.)
- 4 red peppers, finely chopped (about 2 c.)
- 1 tsp. ground turmeric
- 2 large onions, finely chopped (about 2 c.)
- 2 c. sugar
- 2 c. cider vinegar
- 2 Tbsp. salt
- 2 tsp. dry mustard
- 1 tsp. hot pepper flakes
- cornstarch to thicken
- Use large saucepan (8 quarts).
- Cut corn from cobs, scraping the ears, making about 4 cups.
- Mix corn with the chopped vegetables.
- Place all vegetables in large pan and add all remaining ingredients.
- Bring to a boil and simmer the relish over low heat, stirring occasionally, until fairly thick, about 30 minutes.
- Process in boiling water bath for 10 minutes.
- Yields 6 1/2 pints.
