Farm Fresh Chicken Marsala
- 2 TB olive or peanut oil
- 3 cloves garlic chopped fine
- 1 tsp fresh ginger chopped fine
- 1 onion chopped
- 1 red bell pepper chopped
- 2 TB curry powder
- 1/4 tsp black pepper
- 1 boneless chicken breast 1" chunks
- 1 butternut squash peeled 1" chunks
- 1 28-ounce can crushed tomatoes
- 1 tsp sugar
- Optional: 1 cup fresh chopped greens and stems (ie spinach leaves, collards, mustard greens, etc.)
- 1. In a large 2-quart pot, heat 1 TB oil on medium heat.
- 2. Add onion and bell pepper, stirring 5 minutes.
- 3. Add garlic and ginger, stirring until garlic is light brown
- 4. Add remaining 1 TB oil.
- 5. Stir in curry powder
- 6. Add black pepper
- 7. Put chicken breast, saute until done
- 8. Add butternut squash
- 9. Pour in crushed tomatoes
- 10. Turn heat to high and bring to a boil
- 11. Add sugar, stir
- 12. Add greens (optional)
- 13. Turn heat to low and simmer for 20-30 minutes
- Serve over rice and/or pita bread.
