Oatmeal Cream Pies

  1. For Cookies:
  2. 1. Heat oven to 350F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
  3. 2. Add eggs and vanilla; beat well.
  4. 3. Add combined flour, baking soda, cinnamon and salt; mix well.
  5. 4. Add oats and raisins; mix well.
  6. 5. Drop dough by rounded spoonfuls onto ungreased cookie sheets.
  7. 6. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.
  8. For Filling:
  9. To listed ingredients add enough milk to moisten. Beat with mixer until creamy & fluffy.
  10. To assemble - put two cookies together with a dollop of filling.
