Summer Greek Salad
- 2 medium cucumbers quartered and cut into thick slices
- 4 small tomatoes halved, seeded and sliced
- 1/2 cup red onion thinly sliced
- 8 ounces feta cheese crumbled
- 1/2 cup kalamata olives sliced (optional)
- 2 tbsp red wine vinegar
- 4 tbsp extra virgin olive oil
- 1 tbsp dill dried
- 1 tsp lemon juice
- salt and ground black pepper; to taste
- 1. Place first four (five, if including olives) ingredients in a bowl.
- 2. Whisk together vinegar, olive oil and lemon juice.
- 3. Drizzle mixture over ingredients in the bowl.
- 4. Sprinkle herbs, salt and pepper over ingredients and mixture
- 5. Gently stir or toss together until ingredients are coated with mixture and herbs.
