Mom'S Gazpacho Plus
- 4 green onions (scallions) chopped thin
- 1 cucumber, pared, chopped coarse
- 1 green pepper, chopped(?)
- 4 medium tomatoes, (may be heirloom) chopped
- 2 Tbs minced parsley
- 1 clove garlic mashed
- 1 red onion chopped
- 1 tsp salt
- 1/2 tsp pepper
- 3 Tbs Olive oil
- 1/4 cup red wine vinegar
- 2 cups tomato juice
- dash of Tobasco or Sriracha hot chili sauce
- Combine all ingredients (except the pepper) and refrigerate 1-2 hours before serving.
- Serve with dollop of sour cream and croutons.
- We usually double the recipe and skip the green pepper.
- Another genius idea is skipping the tomato juice, and pureeing half of giant bowl to create the "stock."
