Payday Bar Cake
- 1 yellow cake mix
- 1/3 c. butter
- 3 c. miniature marshmallows
- 2/3 c. light corn syrup
- 1 egg
- 2 tsp. vanilla
- 2 c. peanut butter chips
- 2 c. salted peanuts
- 1 1/2 c. crisp rice cereal
- 1/4 c. butter
- Preheat oven to 350u0b0.
- Mix together cake mix, 1/3 c. butter or margarine and egg.
- Press into the bottom of a 9x13-inch pan.
- Bake at 350u0b0 for 12 to 18 minutes.
- Remove from oven and sprinkle with marshmallows.
- Return to oven for 1 to 2 minutes or until marshmallows begin to puff.
- In a saucepan over medium heat cook corn syrup, 1/4 c. butter, vanilla and peanut butter chips until melted.
- Remove from heat, stir in rice cereal and peanuts.
- Spoon mixture over marshmallow topped cake and spread to cover.
- Allow to cool before serving.
