Dotti'S Apple Cake
- 2 cups of baking splenda
- 3 cups of flour
- 1 cup coarsely chopped nuts (I use walnuts)
- 2 tsp cinnamon(I like it so I use more)
- 1 cup oatmeal (old fashioned)
- 1/2 cup wheat germ
- 3 eggbeaters
- 1 1/2 cup of applesauce or fat free yogurt(sometimes I use vanilla or lemon)
- 1 tsp of each:
- baking soda
- salt
- vanilla
- 3 cups apples cut into small pieces, no need to peel(I like to use Granny Smith)
- Topping;
- 1 cup dark brown sugar(splenda)
- 1/4 cup skim milk
- 1/2 cup "I Can't Beleive It's Not Butter"
- frozen fat free cool whip
- 1.mix all dry ingredients together
- 2.add the apples,eggbeater,vanilla and applesauce
- 3.pour into a tube pan and bake 350 for one hour or until done(pick comes out rather clean)
- 4. put all topping ingredients together, bring to boil. pour over cake in the pan
- 5.cool
- 6.serve with spoonful of fat free frozen cool whip ( it's like ice cream when it's frozen)
