Pumpkin Roll
- 3/4 C flour
- 1 C sugar
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 C Pumpkin puree
- 3 eggs
- 1 tsp lemon juice
- 2 TBSP powdered sugar
- 8 oz Cream Cheese
- 1/4 C Butter
- 1 tsp vanilla
- 1 C Powdered Sugar
- Preheat oven to 190C. Grease and flour 9x13 pan/cookie sheet. Mix together the top four ingredients. Stir in the next three ingredients until mixed together. Pour dough into pan. Bake for 15-18 minutes. Lay down a damp towel on counter and sprinkle with 2 TBSP powdered sugar. Turn cake over onto towel. Carefully roll up the towel lengthwise. Cool for 20 minutes.
- For the icing beat the last four ingredients together. Once cake has cooled for 20 minutes unroll it carefully and spread the icing on the cake. Reroll the cake w/out the towel in plastic wrap or wax paper. Store in refrigerator until serving. Cut just before serving.
