Cauliflower Crust Pizza

  1. Shred the cauliflower into small crumbles using a cheese grater. You will make around 2 cups of crumbles.
  2. Place the cauliflower in the microwave for 8 minutes to dry it out then give it a chance to cool.
  3. Preheat the oven to 450 degrees F.
  4. Thoroughly mix in the egg, cheese and spices.
  5. Spray my pizza stone or baking sheet with vegetable cooking spray and spread out a handful of cornmeal all over. Place the cauliflower dough in the center of the stone and pat it down into a 9-12 inch round crust.
  6. Place the raw garlic cloves in foil with olive oil, salt and pepper, closed up the foil and place it in the oven to roast.
  7. Then bake the crust for 15 minutes, until golden brown. Check on the crust after 12 minutes for browning since the pizza will still go back in to the oven with the toppings and will get even darker.
  8. At this point, take out the foil packet of garlic as well and set aside.
  9. Turned the oven up to broil. Top the crust with the marinara sauce, leaving a 1/2-inch border around the edge. Sprinkle on 1/2 cup of the cheese then the peppers, onions, whole roasted garlic and then sprinkle on the rest of the cheese. Broil the pizza for 3 minutes, until the cheese melts and the veggies are hot.
