Fruit Cake(England)
- 1/2 lb. butter
- 1/2 lb. lard
- 2 lb. granulated sugar
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 c. molasses
- 4 eggs
- 1 box currants
- 1 box seedless raisins
- 1 pkg. candied citron
- 1 pkg. candied pineapple
- 2 pkg. candied lemon peel
- 2 pkg. candied orange peel
- 2 pkg. candied cherries
- 1 lb. walnuts
- 6 c. coffee
- 14 c. flour plus 2 Tbsp.
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- Line 8 bread pans with wax paper.
- Cream shortening and sugar. Add spices, molasses and beaten eggs.
- Mix thoroughly.
- Add currants and raisins.
- Cut up candied fruit and add; chop walnuts and add.
- Add salt and baking soda.
- Alternately add coffee and flour, using only enough coffee to make mixture moist.
- Bake in a 250u0b0 oven for 2 hours or until toothpick comes out dry.
- Yields 8 loaves.
