Easy Indian Chicken Stir-Fry
- 4 T. peanut oil
- 4 clove garlic crushed
- 8 scallions diced
- 4 med. zucchini thinly sliced
- 32 oz mushrooms sliced
- 2 10 oz cans diced tomatoes with juice
- 8 cps. cooked chicken diced
- 8 T. soy sauce
- 1/2 tsp. cumin
- 1/2 tsp. gingerroot minced
- 1/4 tsp. ground coriander
- 1/4 tsp. cayenne pepper
- 1/2 tsp. tumeric
- 1 tsp. black pepper
- Heat oil in a wok over medium heat.
- Add the garlic and onions.
- Cook for 3 minutes stirring constantly.
- Add the zucchini for 7 minutes.
- Add the mushrooms, tomato until zucchini is almost tender.
- Add chicken and heat through still stirring.
- Add soy sauce and spices.
- Mix well and serve.
