Quinoa & Corn Salad
- 1 cup quinoa
- 3 ears of yellow corn, shucked
- 1 red bell pepper, finely chopped
- 1 bunch of green onions(white and green thinly sliced
- 1/3 cup finely chopped cilantro
- 1 bunch of baby spinach leaves
- Cilantro, Lime Salad dressing (recipe follows)
- Combine 1 cup quinoa and 2 cups water. Bring to a boil, then reduce heat, cover and cook for approx. 15 min until all water is absorbed. Cool completely.
- Combine, quinoa, corn, red pepper, green onions and about 2/3 of the salad dressing. May be done several hours or 1 day in advance. Just before serving add cilantro, spinach and remaining salad dressing.
- SALAD DRESSING: Juice of 1 lime plus enough white wine vinegar to make 1/3 c., 1 large garlic clove, minced, 1/2 teas. ground cumin. Combine 1/4 cup olive oil and 1/4 cup canola oil and slowly add to lime mixture while whisking.
