Thin Pancakes With Feta Cheese And Mint
- 1/2 cup whole wheat flour
- 1/4 cup all-purpose unbleached flour
- 2 eggs 1 1/2 cup milk
- 2 table spoons of olive oil
- 1/4 cup crumbled feta cheese
- 1 teaspoon dry mint
- unsalted butter for coating the pan
- Combine flours with 1 teaspoon of dry mint.
- In a separate bowl, mix together milk, eggs, olive oil and crumbled feta cheese
- Combine dry ingredients with the wet ingredients and whisk thoroughly until no lumps remain. Let the batter rest for 10-15 minutes
- Heat a small 7 in. nonstick skillet on a medium high heat. Coat the pan lightly with butter stick and pour about 3/4 ladle full of batter. Swirl the pan around vigorously to distribute the batter and cook for 30 seconds on one side, flip and cook 30 seconds on another.
- Lay out on a plate and proceed in the same way with the rest of the pancakes buttering the pan prior to pouring the batter.
