Company Crab Casserole
- 1/2 c. chopped onions
- 1 large clove garlic, finely chopped
- 2 Tbsp. olive oil
- 1 can (16 oz.) whole tomatoes, undrained
- 1 can (16 oz.) tomato sauce
- 1/2 tsp. dried marjoram leaves
- 1/2 tsp. dried basil leaves
- 1/2 tsp. dried oregano leaves
- 1/4 tsp. salt
- dash of red pepper
- 2 c. cooked crabmeat or 1/2-inch pieces imitation crab
- 1/2 c. Feta cheese
- 3 oz. cream cheese
- Cook and stir onion and garlic in oil in 3-quart saucepan until onion is tender.
- Stir in next 7 ingredients.
- Heat to boiling. Reduce heat.
- Cover and simmer 45 minutes.
- Make Lemon Oven Rice. Stir crabmeat and cheese into tomato mixture.
- Spoon over baked rice.
- Bake, uncovered, at 350u0b0 for 20 minutes more.
- Garnish with parsley.
- Yields 6 servings.
