Ellen'S Blueberry Concoction
- Batter:
- 1 pint of fresh or frozen blueberries
- 1 Tablespoon lemon juice
- 1/4 cup softened butter
- 3/4 cup organic sugar
- 1/2 cup milk
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Topping:
- 1/4 cup of organic sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- Grease an 8x8" square pan.
- Preheat the oven to 375 F.
- Put 1 pint of fresh or frozen blueberries in the bottom of the pan and sprinkle with 1 tablespoon of lemon juice. Set aside.
- Cream together 1/4 cup softened butter and 3/4 cup organic sugar.
- Add 1/2 cup milk, 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon salt.
- Spread over berries - it will be thick so it needs to be done by the spoonful. Do not stir.
- Topping:
- Mix in bowl 1/4 cup of organic sugar, 1 tablespoon cornstarch and 1/2 teaspoon salt. Sprinkle over batter.
- Pour on 1 cup boiling water. DO NOT STIR IN.
- Put in the oven and bake for 45 to 60 minutes. (Use the longer time if berries were frozen, shorter time if fresh.)
