Sausage And Bean Soup
- 2 tblsp olive oil
- 1 pound (3-4) links Hot Italian
- sausage (you can use mild sausage if you like) cut into 1/4 inch rounds.
- 1 diced onion
- 4 cloves garlic diced
- 1 can beef broth with one can water
- 1 can chicken broth with one can water
- 1 can chick peas, rinsed and drained
- 1 can white kidney beans, rinsed and drained
- 1 large can (28 oz) diced tomatoes
- 2 cups small pasta - ditali or shells
- In dutch oven or large pot, on medium heat brown sausage in olive oil, add onion and cook until soft. Add garlic cook 30 seconds.
- Add soups with water, beans and tomatoes.
- Bring to boil.
- Reduce to simmer and cook 15 minutes.
- Bring back to a boil and add pasta, simmer until pasta is cooked.
