Fried Ginger Scallion Noodles With Spicy Beef
- 8 ounces flank steak
- Beef Marinade:
- 1/2 cup soy sauce
- 3 tablespoons water
- 1/3 cup honey
- 2 tablespoons sesame oil
- 2 garlic cloves, crushed
- 1/2 teaspoon red pepper flakes
- 2 tablespoons scallions, thinly sliced
- 1 teaspoon toasted sesame seeds
- Ginger Scallion Noodles:
- 1 package ramen noodles
- 1 1/2 cups scallions, thinly slice
- 1/4 cup fresh ginger, minced
- 1/3 cup vegetable oil
- 1/4 cup sherry vinegar
- 1 tablespoon soy sauce
- Garnish:
- Chili sauce or siracha, fresh cilantro
- In a medium bowl, combine all of the ingredients for the Beef Marinade. Marinade the beef for at least 2 hours or up to 24 hours.
- For the noodle sauce:
- In a small bowl combine the scallions, fresh ginger, vegetable oil, vinegar and soy sauce and set aside.
- Heat a large non-stick pan over medium-high heat. Add the Flank Steak and cook about 2-3 minutes on each side. Transfer the steak to a cutting board and let rest. Reserve the pan with the drippings.
- Meanwhile, bring a small pot of water to a boil, and cook the ramen noodles for about 2 minutes (think top ramen!)
- Again, heat the same pan to high. Add the sauce to the pan and then the noodles. Fry the noodles until they start to get a little crispy, about 3 minutes. I was pushing them down hard in the pan with a spatula so they got a little sear on some of them.
- While the noodles are frying, thinly slice the beef.
- Transfer the noodles to serving bowls and top with the beef. Garnish with some fresh cilantro and chili garlic sauce if desired.
