Cheesy Corn Chowder
- vegetable cooking spray
- 3/4 c. sliced green onions
- 1/2 c. chopped celery
- 1/2 c. chopped sweet red pepper
- 3 1/2 Tbsp. all-purpose flour
- 4 1/2 c. skim milk, divided
- 2 c. frozen whole kernel corn, thawed
- 2 1/2 tsp. chicken flavored bouillon granules
- 1/8 tsp. ground white pepper
- 3/4 c. shredded reduced-fat sharp Cheddar cheese (3 oz.)
- Coat a large saucepan with cooking spray; place over medium heat until hot.
- Add green onions, celery and sweet red pepper; saute until tender.
- Combine flour and 1/2 cup milk; stir until smooth.
- Add flour mixture, remaining 4 cups milk, corn, bouillon granules and ground pepper to vegetable mixture.
- Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes.
- Add cheese; cook, stirring constantly, until cheese melts.
- Yield:
- 6 cups (181 calories per 1 cup serving, 20% from fat).
