Cheesy Corn Chowder

  1. Coat a large saucepan with cooking spray; place over medium heat until hot.
  2. Add green onions, celery and sweet red pepper; saute until tender.
  3. Combine flour and 1/2 cup milk; stir until smooth.
  4. Add flour mixture, remaining 4 cups milk, corn, bouillon granules and ground pepper to vegetable mixture.
  5. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes.
  6. Add cheese; cook, stirring constantly, until cheese melts.
  7. Yield:
  8. 6 cups (181 calories per 1 cup serving, 20% from fat).
