Taylor Ham, Egg & Cheese Panini Wrap
- 4 large sandwich wraps (any flavor or kind)
- 4 slices Taylor Ham, cooked until crisp
- 4 slices American cheese
- 8 pieces sundried tomatoes in oil
- 1/2 of your favorite pesto
- 8 eggs that have been slightly beaten & cooked scrambled until just firm
- Nonstick cooking spray
- Panini press or two cast-iron skillets
- 1. Assemble the sandwiches by laying open the wraps and placing the ham, then the cheese, then the tomatoes and a tablespoon of pesto on each wrap.
- 2. Divide the scrambled eggs evenly between the four sandwiches.
- 3. Fold in the sides of the wrap and roll up the wrap from the bottom to form a burrito-style sandwich.
- 4. Cook in a preheated panini maker or heat a medium size cast-iron skillet over medium-high heat. Spray wrap and place in the pan. Weigh it down with the other cast-iron skillet and cook until light brown and crispy. Flip the sandwich and repeat on the other side.
- 5. Remove sandwich to a preheated warm oven while you prepare the other wraps.
- 6. Repeat with remaining wraps and serve warm.
