Rustic Grilled Potatoes

  1. (Modified for ease)
  2. Place first 7 ingrediants in bowl of food processor and chop. Add oil in stream until incorporated. Set aside.
  3. Quarter potatoes and place in covered microwave safe container. Add small amount of water. Microwave on setting 8 for approximately 5 minutes until just barely softening. Remove and rinse briefly to remove starch.
  4. Place potatoes in bowl and add viniagrette. Toss to coat and let sit for minimum 15 minutes.
  5. Place grill basket over cookie sheet and pour potatoes into basket. Remove from cookie sheet and place in heated grill. Reduce burners to low. Grill for 10-15 minutes, turning occasionally, until browned.
  6. Serve.
