Rustic Grilled Potatoes
- 1 clove garlic, chopped
- 1/2 t coarse salt
- 1 t Dijon mustard
- 1 T lemon juice
- 2 t red wine vinegar
- 1 t Hungarian sweet pepper
- 1/2 t chopped fresh rosemary
- 1/3 cup olive oil
- 1 1/2 small potaotes
- (Modified for ease)
- Place first 7 ingrediants in bowl of food processor and chop. Add oil in stream until incorporated. Set aside.
- Quarter potatoes and place in covered microwave safe container. Add small amount of water. Microwave on setting 8 for approximately 5 minutes until just barely softening. Remove and rinse briefly to remove starch.
- Place potatoes in bowl and add viniagrette. Toss to coat and let sit for minimum 15 minutes.
- Place grill basket over cookie sheet and pour potatoes into basket. Remove from cookie sheet and place in heated grill. Reduce burners to low. Grill for 10-15 minutes, turning occasionally, until browned.
- Serve.
