Gluten-Free Grown Up Mac N' Cheese

  1. Set oven to 325.
  2. Cook Quinoa pasta for 1/2 the time instructed on packaging. Approx. 3-4 minutes.
  3. While cooking pasta, fry sausages in olive oil, when cooked, slice into small chunks and saute with the garlic, mushrooms, and sea salt. Approx 10 minutes.
  4. Drain Pasta and combine pasta and sauteed ingredients in a large bowl. Mix in wine, butter, and cheese stir gently to coat all pasta.
  5. Pour all into a cassarole dish (lined with foil if you like, or just oiled with olive oil.) Bake for 40 minutes, stirring twice. Broil for 2 minutes on high and serve.
