Gluten-Free Grown Up Mac N' Cheese
- 1 Box Quinoa Pasta Shells
- 1/2 Stick Butter, salted
- 3 Tbl Spoons Olive Oil
- 1/2 Cup Dry White Wine
- 1/2 Cup Garlic Cloves
- 1 Tsp Course Ground Sea Salt
- 2 Lbs Venison Sausage
- 1/2 Lb Aged Cheddar Cheese, Cut to 1" Cubes
- 1/2 Cup Porcini Mushrooms, Sliced
- Set oven to 325.
- Cook Quinoa pasta for 1/2 the time instructed on packaging. Approx. 3-4 minutes.
- While cooking pasta, fry sausages in olive oil, when cooked, slice into small chunks and saute with the garlic, mushrooms, and sea salt. Approx 10 minutes.
- Drain Pasta and combine pasta and sauteed ingredients in a large bowl. Mix in wine, butter, and cheese stir gently to coat all pasta.
- Pour all into a cassarole dish (lined with foil if you like, or just oiled with olive oil.) Bake for 40 minutes, stirring twice. Broil for 2 minutes on high and serve.
