Crossover Chili
- 1 lb. 93% lean beef
- 1 lb. ground chuck
- 1 lb. chopped onions
- 28 oz. diced canned tomatoes
- 2 14 oz. cans kidney beans
- 6 oz. beer
- 2 TBL concentrated beef base
- 1/2 TBL ground cumin
- 1 TBL chili powder
- 3 large jalapenos seeded or not
- 1/2 TBL cayenne pepper
- 1 TBL paparika
- 1/2 TBL fresh ground black pepper
- kosher salt to taste
- Brown meats add onion when meats have released juices. Cook meat and onions until meat is browned and onions are soft.
- stem and remove veins and seeds from jalapenos then chop in a food processor until small chop then add to mix.
- Use food processor to lightly puree kidney beans and add to mix.
- Add diced tomatoes and beef concentrate and stir.
- Add beer, stir and simmer for 10 minutes.
- Add spices, stir, and cook on low heat for two hours.
