Sunshine Salad
- Dressing
- 1/2 cup oil
- 3 TBSP red wine vinegar
- 1 TBSP lemon juice
- 2 Tsp sugar
- 1/2 Tsp salt
- 1/2 Tsp dry mustard
- 1 glove garlic, crushed
- Salad:
- 1/2 cup sunflower seeds - raw
- 1/2 cup slivered almonds - raw
- 1 head leaf or 2 heads butter lettuce
- (I have made this with mixed baby greens as well)
- 2 green onions finely chopped
- 1 - 10 oz can mandarin oranges drained or 2 fresh mandarins (even better)
- 1 ripe Avocado, peeled and sliced
- Combine dressing ingredients in a jar - Shake to blend.
- Toast nuts until brown, then cool.
- Prepare the remaining ingreadients, add cooled nuts.
- Add dressing to taste.
