Greek Lemon Chicken Orzo Soup

  1. 1. Dice onion and roughly chop celery.
  2. 2. Heat olive oil and saute onions and celery for 5 minutes. Add salt, pepper, and dried dill.
  3. 3. Add chicken broth and water and heat to boiling.
  4. 4. Slice chicken breasts into two to four pieces each and add to pot. Lower heat to simmer and heat for 5 minutes.
  5. 5. Add orzo to pot and continue cooking 10 more minutes.
  6. 6. Remove chicken, shred, and add back to pot. Add lemon juice and zest to pot. Stir well.
  7. 7. Serve in bowls topped with chopped, fresh dill.
