Greek Lemon Chicken Orzo Soup
- 1 onion
- 2 stalks celery
- 3 tablespoon olive oil
- 1 tablespoon salt
- 1 teaspoon pepper, white
- 1 tablespoon dill
- 4 cups chicken broth
- 3 cups water
- 2 chicken breast
- 2 lemons, zested and juiced
- 1/2 box orzo
- 4 sprigs dill, fresh
- 1. Dice onion and roughly chop celery.
- 2. Heat olive oil and saute onions and celery for 5 minutes. Add salt, pepper, and dried dill.
- 3. Add chicken broth and water and heat to boiling.
- 4. Slice chicken breasts into two to four pieces each and add to pot. Lower heat to simmer and heat for 5 minutes.
- 5. Add orzo to pot and continue cooking 10 more minutes.
- 6. Remove chicken, shred, and add back to pot. Add lemon juice and zest to pot. Stir well.
- 7. Serve in bowls topped with chopped, fresh dill.
