Charlie'S Beef Stroganoff
- 1/4 c. butter
- 1 clove garlic, minced
- 4 shallots, minced
- 1 medium onion, chopped
- 6 mushrooms, sliced
- 1 bay leaf
- 2 1/2 Tbsp. flour
- 6 Tbsp. tomato sauce
- 2 c. hot beef broth
- 1 1/2 lb. beef tenderloin ends
- salt and pepper
- 1 Tbsp. Worcestershire sauce
- 1/2 c. sherry
- dash of hot pepper sauce
- 1/4 c. sour cream
- 2 Tbsp. chopped chives
- steamed rice
- Melt 2 tablespoons of butter in a saucepan.
- Add garlic, shallots, onion, mushrooms and bay leaf.
- Saute vegetables until tender, but not browned.
- Discard bay leaf.
- Stir in flour until well blended.
- Add tomato sauce and hot broth.
- Stir until well blended.
- Cook until smooth and slightly thickened.
- Reduce heat and simmer 10 minutes, stirring occasionally.
