Overnight Glazed Banana French Toast

  1. The Night Before
  2. Use a large rectangular glass baking dish and arrange all bread slices to fit flat.
  3. Cut banana in half. Set aside half.
  4. Peel half of banana and cut 1/8-1/4 in. thick slices. Set aside.
  5. Prepare the batter:
  6. In a large mixing bowl, whisk 3 eggs together until bubbly.
  7. Add a splash of half & half and continue whisking.
  8. Add a splash of o.j. and continue whisking for viscous, somewhat creamy, not watery, consistency.
  9. Remove bread from baking dish.
  10. Pour entire mixture into baking dish.
  11. Add a few shakes of powdered cinnamon,
  12. Add one shake of powdered clove and whisk around.
  13. Add more cinnamon or clove to taste.
  14. Assemble:
  15. Place all 6 pieces of bread flat into baking dish.
  16. Fork pierce through bread near crust so batter will go deep.
  17. Let each side soak up batter just enough so they can be turned over without being too soggy.
  18. There will still be a thin layer of batter at bottom of dish.
  19. One by one, gently press two or three slices of banana onto both sides of each slice.
  20. Cover dish with foil and place in refrigerator overnight.
  21. The Morning Fry
  22. Remove dish from fridge.
  23. Have a serving platter nearby.
  24. Slice other half of banana.
  25. Melt some butter in a large, flat skillet on medium heat.
  26. Gently remove slices from baking dish and place in pan to fry until golden brown on each side.
  27. Place all slices on serving platter.
  28. Fry up banana slices until golden brown on each side - about 2 min a side.
  29. Garnish with fried bananas.
  30. Serve immediately with maple syrup on the side.
