Stir Fried Mixed Vegetable With Cottage Cheese/Paneer

  1. In a deep pan heat the oil, add onions and fry till transparent. add green chillis and give a stir, add garlic and ginger one after another.
  2. add the spinach leaves and stir. when the spinach has softened add the potato and allow to cook on a slow flame for 1 minute. to this add the cabbage, stirring till vegies are combined. add cauliflower florets and cook for 1/2 min stirring all the while. add the beans and carrots, after 1/2 min add the boiled peas. add all the capsicum together, stir till all the veggies are combined. lastly add the cottage cheese or paneer. add soya sauce, stir lastly the thyme and sage or basil. salt to taste, and finally the vinegar. after a stir remove ffrom stove. serve either hot or cold with chapattis, noodles, rice or pasta. In the case of noodles, rice or pasta--boil as instructed, drain cool and mix together.
