Prawns With Garlic, Lemon & Parsley Butter
- 4 1/4 oz unsalted butter, chopped
- 6 garlic cloves, crushed
- 1 very large handful flat-leaf parsley leaves, chopped, plus whole leaves for garnish
- 3 lb 5 oz raw prawns, peeled and deveined, tails left intact
- 1 un-waxed lemon, half rind finely grated and other half zested
- 2 tablespoons lemon juice
- crusty bread to serve
- preheat oven to 400. Place the butter in large baking dish and heat in the oven for 2-3 minutes or until melted. Sprinkle the garlic and parsley over the base of the dish. Arrange the prawns in a single layer in the dish and season with salt and pepper. Bake for 3 minutes, then turn over, sprinkled with the grated lemon rind and lemon juice and bake for another 4-5 minutes or until the prawns turn opaque and start to curl. Divide among small plates, spoon over the sauce and top with lemon zest and parsley leaves. Serve with crusty bread to mop up the sauce.
