Pasta Genovese
- One 5 oz. package Farmhouse(R) Four Cheese Pasta
- 2 Tablespoons butter or margarine
- 3 oz. prosciutto or ham cut in thin strips
- 5 oz. frozen peas, thawed
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon nutmeg
- 1-1/4 cups warm water
- 3/4 cup milk
- 1/4 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- In medium sauce pan, melt butter or margarine. Add prosciutto and cook 3-4 minutes, stirring frequently.
- Add peas, Italian seasoning, nutmeg, water, milk, pasta and contents of seasoning packet. Heat to a boil, stirring frequently. Reduce heat and low-boil uncovered 12 minutes, stirring frequently, until tender.
- Remove from heat. Stir in ricotta cheese and Parmesan cheese. Let stand for 5 minutes. Sauce will thicken as it stands.
