Chicken-Lemon Chicken (Mom)
- -5 lbs chicken breasts
- -2 C fresh lemon juice
- -2 C flour
- -2 t salt
- -2 t paprika
- -1 t black pepper
- -1/2 C corn oil
- -2 T grated lemon zest
- -1/4 C brown sugar
- -1/2 C chicken stock
- -1 t lemon extract
- -2 lemons, sliced paper thin
- 1.tombine chicken breasts and lemon juice in a bowl just large enough to hold them comfortably. Cover and marinate overnight, turning occasionally
- 2.the next morning, drain chicken, pat dry and place in a ziplock bag containing the flour, salt, paprika and pepper. Shake.
- 3.treheat oven to 350u0b0
- 4.try chicken in corn oil until well browned and crisp (about 10 minutes)
- 5.tlace chicken in a shallow baking dish and sprinkle with lemon zest and brown sugar
- 6.tix chicken stock and lemon extract and pour over chicken
- 7.tlace a thin lemon slice over each chicken breast
- 8.take at 350u0b0 for 35-40 minutes
