Cuca'S Rice Pudding (Arroz Con Leche)
- 1 cup short grain rice (Valencia or Arborio)
- 6 cups water
- 14oz can of sweetened condensed milk
- 1 tbsp butter
- 1 tsp sugar
- 1 cup milk
- rind from 1/2 a lime
- 2 sticks of cinnamon
- 1/2 tsp salt
- 1/8 to 1/4 cup sugar
- Bring water and rice to boil in a pressure cooker. Cover and cook 15min at 10lbs. pressure. Decrease pressure slowly.
- Meanwhile, bring 1 c. milk, lime rind, and cinnamon sticks to a slow boil.
- Over low heat, add condensed milk to rice and stir. Then, add hot milk poured through a strainer and stir. Add remaining ingredients, tasting for the amount of sugar. Transfer to a serving dish, and chill for at least one hour before serving.
