Baked Chicken

  1. it depends on the amount of chicken obviously but if I have 4-6 thighs then I start with about 1/4 flour, 1/4 cup progresso bread crumbs and then add spices to taste, salt and pepper (sometimes I will put in a bit of whatever seasoning salt I have on hand), paprika and cumin. There have been times when I have underestimated the amount to all the pieces of chicken so eyeball it to make sure you have enough. It is a pain if your hands are covered with flour and you end up short.
  2. I bake at 350 for anywhere from 35-45 min depending on size of chicken. With a pastry brush dab the tops of the chicken with pan juices (or in the odd case where the chicken doesn't produce enough- a bit of oil but that rarely happens) and then broil for a minute or 2
