Lisa'S Comfort Hearty Grain Casserole
- 1 tbsp olive oil, plus more for greasing pan
- 3 cups cooked whole grains (I use bulgar mostly)
- 2 cooked Italian-style chicken sausages, diced (I frequently sub black or garbanzo beans for this. I like to make it vegetarian)
- 1 cup grated provolone
- 1 15 oz can of diced tomatoes with liquid
- 1 large red bell pepper, seeded and diced
- 1/3 chopped fresh parsley or basil
- 1/4 cup pine nuts
- 1/4 cup grated Romano cheese
- 1 tsp minced garlic
- 1 tsp dried oregano
- 1/4-1/2 tsp crushed red pepper flakes
- salt and pepper to taste
- Preheat oven to 375. Grease an 8 inch square baking pan.
- In a large bowel combine all of the ingredients, holding back 1/4 cup provolone.
- Place in pan, cover with foil and bake until hot (30-35 min) Uncover and sprinkle the remaining cheese on top. Baike until cheese is melted and caserole is bubbly, 3-5 min.
