Oatmeal Pie
- 1/2 c. light brown sugar
- 1/2 c. white sugar
- 1/2 c. butter
- 2 eggs
- 3/4 c. light corn syrup
- 3/4 c. quick oatmeal
- 1 c. flake coconut
- 1 c. milk
- 2 unbaked pie shells
- 8 eggs
- 2 c. sugar
- 1/4 c. flour
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. light corn syrup
- 1/4 c. butter, melted
- 2 tsp. vanilla
- 2 c. uncooked quick oatmeal
- In
- mixer
- bowl, beat eggs until frothy.
- In a separate bowl, combine the sugar, flour, cinnamon and salt; then add to the
- eggs and
- blend.
- Add
- the corn syrup, melted butter and vanilla; blend
- again.
- Mix
- in the oatmeal and pour into the crusts.
- Bake for
- 45
- minutes, or until well set.
- (This can take over an hour, especially when baking more than one pie in an oven.)
