Zucchini Bread
- 1 cup Vegetable Oil
- 1 cup Brown Sugar
- 1 cup Granulated Sugar
- 3 Eggs
- 2 cups shredded Zucchini
- 2 tsps Vanilla
- 1/4 tsp grated lemon rind
- 3 cups flour
- 1 tsp salt
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 3 tsp Cinnamon
- 1/4 tsp Pumpkin Pie Spice
- 1/4 cup nuts or raisins or both in larger amounts.
- Two greased 9"x5" loaf pans
- Preheat oven to 325*
- Makes 2 loves
- Beat well Vegetable Oil, Brown Sugar, Granulated Sugar, and eggs. Blend in Zucchini, Vanilla, and Lemon Zest.
- Then blend flour, salt, baking powder, baking soda, cinnamon, pumpkin pie spice together before blending the entire mixture into the oil & sugar mixture.
- Stir in nuts & raisins.
- Pour into greased pans and bake for 50 to 60 minutes.
- Cool at least ten minutes in pans and then remove from pans to cool thoroughly as long as you can wait.
