Grandma Oma'S Smothered Chicken And Rice
- 1 fryer, cut up & seasoned with salt and pepper
- Oil for frying
- 2 cups plain flour + 4 Tbs.
- 1 tsp. garlic powder
- 1 tsp. black pepper
- 1 tsp. seasoning salt
- 1 tsp. paprika
- 2 cups water
- 1/2 cup milk
- Cut up chicken and season with salt and pepper.
- Add garlic, pepper, seasoning salt, and paprika to 2 cups of flour and stir.
- Dredge chicken in seasoned flour then fry in hot oil until golden brown. Drain on a rack.
- Pour off oil from pan, reserving approximately 4 tbs. Add 4 Tbs. plain flour to oil and make a roux. When roux is browned, stir in water and milk. Cook 5 minutes on medium high.
- Return fried chicken to gravy and simmer with a lid on until gravy is thick (approximately 15 minutes).
- Serve with steamed rice with a side of fresh green beans.
