Apple Oat Muffins
- 1 1/2 cups oat bran
- 1/2 cup whole wheat flour
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup apple juice
- 1/4 cup skim milk
- 3 egg whites
- 2 tablespoons oil
- 2 tablespoons honey
- 1 cup cooked apples, peeled cored and diced
- 2 tablespoons raisins
- Preheat oven to 400 degrees. Combine oat bran, flour, brown sugar, baking powder, salt and cinnamon and set aside.
- In a large mixing bowl combine apple juice, skim milk, egg whites, oil and honey. Add flour mixture, apples, and raisins and combine until just moistened.
- Fill oiled muffin pan. Bake at 400 degrees for about 20 minutes or until golden brown and a cake tester comes out clean.
